Broccoli Cheese Soup

Serves: 4

2 cups Chicken Broth
1 small Onion, dices (2tbsp. dried)
2 cups broccoli pieces, fresh or frozen
1/4 cup butter
1/4 cup flour
2 cups milk
1 1/2 cups Shredded Cheddar Cheese
1/2 cup Shredded Swiss Cheese


In a large stock pot heat the chicken broth, onion, and  broccoli. Bring to a boil and simmer over medium heat for 10 minutes.

In smaller saucepan, melt butter.  Whisk in flour and simmer until bubbly.  Add 2 cups milk and stir just until it start to thicken.
Add the milk mixture to the broccoli.   Stir until mixed well and then remove from heat.  Add cheese and stir until melted.
