- 2 Tbsp. Canola Oil
- 1/2 onion, chopped
- 2 Tbsp. taco seasoning
- 2 15 oz. cans crushed tomatoes
- 1 8 oz. can tomato sauce
- 1/2 cup salsa
- 4 cups water
- 2 Tbsp masa flour
- 1 can black beans
- 1 can pinto beans
- 6-8 oz. corn
- optional add-in -- 1 pound ground beef, cooked
- Add the oil and onion to a large pot over medium heat, and cook until the onion is soft.
- Add the taco seasoning, tomatoes, tomato sauce, salsa, water and masa flour and whisk together.
- Add the beans and corn and bring soup to a boil. If using ground beef, add it at this point.
- Turn heat down to low and simmer for 10 minutes.
Serve in bowls with shredded cheese and tortilla chips.
