Roasted Parmesan Potatoes

Prep time: 30 minutes



  • 1 pound potatoes -red, russet, or yukon gold
  • 1 tbsp. olive or canola oil
  • 1/2 tsp. salt
  • 1/8 tsp pepper
  • 2 tbsp. parmesan cheese

  1. Preheat oven to 400 degrees.
  2. Clean potatoes and peel if desired.
  3. Cut into cubes or fries.
  4. Place in a single layer in a shallow baking dish.
  5. Sprinkle with salt, pepper, and parmesan.  
  6. Bake for 20 minutes or until tender.
