Prep time: 30 minutes
- 1 pound potatoes -red, russet, or yukon gold
- 1 tbsp. olive or canola oil
- 1/2 tsp. salt
- 1/8 tsp pepper
- 2 tbsp. parmesan cheese
- Preheat oven to 400 degrees.
- Clean potatoes and peel if desired.
- Cut into cubes or fries.
- Place in a single layer in a shallow baking dish.
- Sprinkle with salt, pepper, and parmesan.
- Bake for 20 minutes or until tender.
