Makes 1 Pie (Double Crust)

2 cups flour
1 tsp. salt
1/2 cup canola oil
6 Tbsp. cold water
Mix the flour and salt in a food processor and pulse for a few seconds. Add the oil and pulse again. Scrape the sides of the bowl and add the water. Pulse for a couple of minutes. Empty the bowl onto a sheet of wax paper. Knead the dough together, split it half and shape each half into a disc. Set one half aside and roll the other one out between two pieces of wax paper. Roll into a circle big enough to fit into an 8 inch pie pan (2 inches larger than inverted pan). Repeat with the other crust.
One Crust Pie: Place crust in pie pan and prick with a fork. Bake for 8-10 minutes until light brown. Add filling.
Two crust pie: Lay one crust into the pie pan. Fill with filling and the top with the other crust. Pinch the edges together and cut holes in the top to allow steam to release. Bake according to specific pie directions.
