Crepes


Makes: 12 large crepes
30 Minutes

2 cups Milk
2 eggs
1 1/2 cup flour
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla

Place all the ingredients in a blender and blend until smooth. Place about 1/3 cup batter on a hot griddle or pan and spread very thin. Cook until lightly brown and then flip and repeat. Repeat will remaining batter.

Fill crepes with filling and then roll or fold to eat.


cream filling:
8 oz. cream cheese
16 oz. cottage cheese
1 cup sugar

Place all the ingredients in a blender and blend until smooth.

berry filling:
2 cups berries
1/2 cup water
1 cup sugar
2 tbsp. potato starch

Place all ingredients in a medium saucepan and bring to a boil. Boil one minute and then let cool.
