Chocolate Ganache

Makes: 2 cups
Prep Time:  15 mintues

12 oz. chocolate chips (milk, semi sweet, dark--your choice)
1 cup heavy cream
3 tbsp. butter
1 tsp. vanilla
A pinch of salt


Place the chocolate in a large bowl.
In a saucepan, bring the cream, butter, and salt just to a boil.
Pour over the chocolate and let it stand for one minute.
Whisk until smooth, then mix in the vanilla extract.

Cover with plastic wrap and let thicken overnight at room temperature, or refrigerate for no longer than1 1/2 hours.
Use as frosting, filling, dip.
